Ground Meat Poğaça
A must-have for golden days.
Ingredients
- 240 ml milk
- 1 packet dry yeast
- 450 gram flour
- 5 tablespoon butter
- 1 whole egg
- 50 gram sugar
- 2 teaspoon salt
- 250 gram ground beef
- 4 tablespoon olive oil
- 1 whole onion
- 2 clove garlic
- 1 tablespoon tomato paste
- 1 tablespoon red pepper paste
- salt
- black pepper
- red pepper flakes
- ground red pepper
- cumin
- ½ bunch parsley
- 2 whole egg yolk
- sesame
- nigella seed
Method
- Warm the milk slightly and add the dry yeast and some of the sugar, stirring well.
- Let the yeast rise for approximately 10 minutes until it rises.
- Transfer the risen yeast mixture to a deep bowl and add the melted butter, egg, salt, and remaining sugar, mixing well.
- Then slowly add the flour to the mixture and knead. You may need more flour than written in the recipe. Make sure the dough reaches an earlobe consistency.
- Cover the dough and let it rise in a warm place. You can prepare the filling while it is rising.
- For the filling, sauté the onion and garlic in olive oil in a pan, then add the ground meat and continue cooking.
- Once the meat changes color and starts to release its juices, add the tomato paste and red pepper paste and spices, continuing to cook until the meat releases all its liquid.
- Once the meat is fully cooked, remove from heat. Then add the finely chopped parsley and mix. The filling is ready.
- Divide the risen dough into portions.
- Open each portion and add the desired amount of meat filling. Then shape the poğaça as desired and arrange on a baking tray.
- Brush the egg yolk over the poğaça. You can optionally add sesame and nigella seeds.
- If desired, you can let the poğaça rest on the tray for about half an hour before baking.
- Bake in a preheated oven at 200 degrees Celsius on both settings until the poğaça are nicely golden.
- Serve the poğaça as desired.
